What is gumpaste?

Gum paste is a paste made from a mixture of icing sugar, glucose and thickener which makes it possible to obtain a very malleable and elastic paste. These two characteristics are very important because the gum paste is worked in order to obtain a pulled and very fine result, without risk of tearing, unlike the sugar paste.

Gum paste dries very quickly and is very often used to create realistic flower petals, leaves and fine decorations. It is snow white in color, which avoids the use of dyes in order to whiten it further.

How to use gumpaste?

If you are using a silicone mold, simply sprinkle the silicone mold lightly with cornstarch, insert a piece of gumpaste into the mold, roll the gum paste, remove the excess and gently unmold.

If making petals or leaves, spread the gum paste, take out pieces, then work the gum paste using modeling or veining tools.

How to store gum paste?

Gum paste can be stored wrapped in plastic film then placed in an airtight box and stored in the refrigerator.

To use it again, let the gum paste come to room temperature, still wrapped in film, then mix well. Do not hesitate to use a pinch of Crisco or put the gum paste in the microwave on defrost mode to soften it a little.
